Ingredients

  • 8 scallops
  • 3 tbsp Sesame oil
  • Salt
  • Pepper
  • 150 g young spinach leaves
  • 1 Lime
  • 6 tbsp Olive oil
  • 1 tsp Honey
  • 2 tbsp sesame seeds
  • Sea salt

Instructions

    Rinse the scallops and pat them dry with paper towels. Season the sesame oil with a pinch of salt and pepper, then briefly marinate the scallops in it, turning once.

    Wash and trim the spinach, then spin it gently to dry. Juice the lime and whisk together 3 tbsp lime juice with 4 tbsp olive oil, salt, pepper, and honey for the dressing.

    Remove the scallops from the marinade and coat them in sesame seeds. Heat the remaining olive oil in a non-stick pan over medium heat. Sear each side of the scallops for 1-2 minutes until golden brown but not too hot; the center should remain slightly translucent. Season with sea salt. Plate the spinach salad with the dressing and top with the scallops, then serve immediately.
