Ingredients

  • 4 tbsp Lemon juice
  • 5 tbsp olive oil
  • 2 Garlic cloves
  • Salt
  • Pepper
  • 12 scallops (opened without coral)
  • 2 large carrots
  • 1 leek stalk
  • 200 g soy sprouts

Instructions

    Mix lemon juice and olive oil for the marinate. Peel and crush the garlic cloves, then add to the mixture. Season with salt and pepper. Drizzle half of the marinade over the scallops and let sit for 10 minutes.

    Meanwhile, peel the carrots and cut into thin strips. Wash and trim the leek, cutting it into about 10 cm long, thin strips. Rinse the soy sprouts under running water.

    Thread the marinated scallop halves onto wooden skewers.

    Turn on the oven grill, place the scallop skewers on a foil‑covered tray and grill on the upper rack for about 5 minutes, turning once and basting with marinade.

    Boil plenty of water in a pot, add vegetable strips and sprouts, bring to a boil, then strain. Mix the vegetables with the remaining marinade in a bowl, serve on plates, and arrange the scallop skewers on top.
