Scallop Finger Food

Simple yet special: impress your guests with the delicious scallop finger food from Spoonsparrow!

Ingredients

  • 1 Garlic clove
  • half a lime
  • 1 ripe Avocado
  • 1 tbsp salad cream
  • 1 tbsp Crème fraîche
  • 2 drops Tabasco
  • Salt
  • Pepper
  • 4 scallops (cleaned, no roe)
  • vanilla salt
  • 1 tsp butter

Instructions

    For the avocado cream, peel and press the garlic. Squeeze half a lime. Cut the avocado in half lengthwise, remove the pit, and scoop out the flesh with a spoon. Blend together with garlic, 1 tsp lime juice, salad cream, and crème fraîche until smooth; season with Tabasco, salt, and pepper.

    Pat the scallop meat dry, skewer each scallop on a wooden stick, and season with vanilla salt and pepper. Heat butter in a grill pan and cook the scallops for about 1 minute on each side.

    Fill four small glasses with avocado cream, insert one scallop skewer into each glass, and serve the scallop finger food as hot as possible.
