Baked Scallops with Curry

The baked scallops with curry from Spoonsparrow are a delight, not just for gourmets!

Ingredients

  • 12 scallops
  • 1 Spring onion
  • 75 ml light grape juice
  • 1 tsp curry powder
  • 2 Tbsp softened butter
  • 4 tbsp grated Parmesan
  • Pepper (freshly ground)
  • 2 Tbsp whole-grain breadcrumbs
  • 1 tbsp freshly chopped parsley

Instructions

    Open the scallops, remove the meat with a coral knife and clean it. Distribute onto 12 porcelain scallop bowls.

    Wash and trim the spring onion; slice the green part into fine rings and finely chop the white part. Mix with grape juice, curry, butter, and Parmesan, then spread over the scallop flesh.

    Sprinkle breadcrumbs on top and bake in a preheated oven using the grill function for about 2 minutes until golden (gratinated).

    Serve garnished with spring onion greens.
