Fried Dough Balls

Ingredients
- 50 g butter
- 1 pinch salt
- 150 g flour
- 1 tbsp sugar
- 1 tsp Baking powder
- 4 eggs
- frying oil (e.g., clarified butter)
- powdered sugar (for dusting)

Bring 250 ml water with butter and salt to a boil. Whisk the flour into the boiling liquid all at once. Stir until the dough forms a "white skin" on the bottom of the pot and is "burnt".

Transfer the dough to a mixing bowl. Mix sugar with baking powder and fold in (using an electric mixer with dough hooks); gradually beat in the eggs and work everything into a smooth, glossy dough.

Heat the frying fat in a wide pot. There should be enough fat so that the dough balls can float.

Using a teaspoon, cut small balls from the dough and fry them in the hot fat (about 170 °C) in batches for 2–3 minutes until golden yellow. Turn occasionally to cook evenly.

Let the pastries drain on kitchen paper and dust with powdered sugar before serving.
