Savory Cabbage Bundles

Ingredients
- 1 loaf roll (from yesterday)
- 1 onion
- 2 Garlic cloves
- 1 bunch parsley
- 2 Eggs
- 2 tbsp breadcrumbs (as needed)
- 500 g mixed ground meat
- Salt
- Pepper (freshly ground)
- paprika powder
- Cayenne pepper
- 12 large cabbage leaves
- 1 Tbsp clarified butter
- 200 ml vegetable broth

Soak the roll in a bowl with water. Peel and finely chop the onion and garlic. Wash and finely chop the parsley. Squeeze out excess liquid from the roll and mix it with the onion, garlic, parsley, eggs, breadcrumbs, and ground meat; knead into a dough. Season with salt, pepper, cayenne, and paprika; knead again.

Blanch the cabbage leaves in plenty of salted water for about 3 minutes, then shock them in ice water and drain. Stack about three leaves on top of each other (largest at bottom) and fill each stack with one quarter of the meat mixture. Fold the sides up and tie with kitchen twine all around.

Preheat the oven to 200°C fan. Heat clarified butter in a roasting pan over the stove and quickly brown the four cabbage bundles. Pour in the broth, cover, and bake for about 40 minutes. After roughly 30 minutes remove the lid and grill the filled cabbage for about 8 minutes until lightly browned.
