Ingredients
- 1 onion
- 5 tbsp clarified butter
- 600 g sauerkraut
- 200 ml dry white wine
- 200 ml meat broth
- 1 bay leaf
- 1 tbsp juniper berries
- 1 tsp peppercorns
- 20 small bratwurst sausages (e.g., Nuremberg roast sausages)
- Salt

Peel the onion and dice finely. Sauté in 1 tbsp hot clarified butter until translucent. Add the sauerkraut, pour in white wine and broth. Add bay leaf, juniper berries, and peppercorns (optional in a spice sachet). Simmer gently for about 20 minutes.

Heat remaining clarified butter and brown the sausages, turning occasionally, for about 5 minutes until crisp. Season the sauerkraut with salt and remove the spices.

Serve the sausages with the sauerkraut. Offer potato pancakes on the side if desired.
