Ingredients
- 1 onion
- 200 g carrots
- 20 g clarified butter
- 1 kg sauerkraut (milchsaure fermented)
- 150 ml Vegetable broth
- 100 ml White wine
- Salt
- 1 tsp crushed caraway seeds
- 1 bay leaf
- 2 juniper berries

Peel and finely dice the onion. Peel and grate the carrots finely. Heat the clarified butter in a pot, add the onions and sauté until translucent. Add the carrots and sauerkraut and sauté briefly. Pour in vegetable broth and white wine, season with salt.

Add the caraway seeds, bay leaf, and juniper berries to a spice sachet, place it in the pot, and simmer over low heat for about half an hour. Remove the sachet, taste, and serve hot.
