Ingredients

  • 800 g roast beef (4 pieces)
  • 80 g fat
  • 250 g root vegetable mix
  • 2 onions
  • 20 g sweet paprika powder
  • flour
  • Salt
  • Pepper
  • 100 ml beef broth
  • 50 ml red wine
  • 2 tsp capers
  • Lemon juice
  • 250 ml sour cream

Instructions

    Score the roast beef on the edges, flatten, season with salt and pepper, sear both sides in hot fat until crisp, then remove from pan.

    Cut the root vegetables into julienne strips, finely chop the onion, and sauté in the remaining drippings. Remove from heat; set aside 1/2 to 2/3 of the veggies for garnish, keep warm.

    Dust the remaining veggies with flour, pour in beef broth while stirring, then puree. Return the roast beef to the mixture and braise covered at 200°C for 40‑50 minutes. Add more broth if needed.

    Finally add red wine and capers, season with lemon juice. Stir in sour cream, bring to a brief simmer. Plate the roast beef with root vegetables on warmed plates.
