Ingredients

  • 1 kg sour cherries
  • 1 kg gelatin sugar
  • 1 untreated orange
  • 3 oranges
  • 1 lemon (juice)
  • 3 stems thyme
  • 40 ml orange liqueur

    Wash the cherries, remove stems, pit and halve them. Combine with the sugar in a pot, mix well, and let steep for about 1 hour.

    Heat the untreated orange, dry it with a towel, then grate its zest. Peel all oranges thoroughly and cut out the segments. Squeeze juice from the remaining pulp. Rinse the thyme, shake dry, and strip the leaves.

    Mash the cherries lightly with a potato masher to make them slightly chunky. Add the orange segments, zest, orange juice, lemon juice, and thyme; stir and bring to a boil. Cook for about 5 minutes while bubbling (perform a gel test), then stir in the liqueur and pour the jam into prepared jars. Seal tightly and let cool.
