Sardines in Oil

Ingredients
- 800 g very fresh sardines
- Salt
- 500 ml white wine vinegar
- 3 Garlic cloves
- 1 handful fresh parsley
- pepper (ground)
- Lemon juice
- 130 ml olive oil

Separate the heads of the fish and cut along the belly side lengthwise with a sharp knife. Remove bones, rinse, and pat dry. Slightly separate the double fillets, flatten them, and place skin-side up in a dish. Sprinkle with salt and cover with vinegar. Let rest covered for at least 5 hours, preferably overnight.

Rinse, pat dry again, and put back in a shallow container. Peel the garlic and slice thinly. Wash the parsley, shake dry, pluck leaves from stems, and roughly chop.

Season the fish with salt and pepper, sprinkle with garlic and parsley, add a splash of lemon juice, and cover with olive oil. Let rest another hour in the refrigerator.

Serve later with a piece of white bread and a dry wine.
