Sanddornjelly

Ingredients
- 800 g sea buckthorn berries
- 4 pears
- 4 sour apples
- 1 lemon (juice)
- orange juice (to top up)
- 500 g gelatin sugar (2:1)

Wash the sea buckthorn and place it in a large pot. Wash the pears and apples, quarter them and cut into small pieces. Add both to the sea buckthorn, pour in the lemon juice and 200 ml water. Cover and bring to a boil. Simmer gently for about 15 minutes until the fruit is soft.

Mash with a masher until smooth and strain the puree through a cloth-lined sieve. Squeeze out the juice and measure it. If necessary, top up to 800 ml with orange juice. Pour the juice into a pot, stir in the sugar and bring to a boil. Boil for about 4 minutes while bubbling (perform a gel test) and pour into prepared jars. Seal well and let cool.
