Finnish Fish Soup

Ingredients
- 750 g fish fillet (as desired)
- 1 onion (finely chopped)
- 1 tbsp butter
- 2 carrots
- 1 large leek stalk
- 150 g celery
- 300 g potatoes
- 2 Garlic cloves
- Salt
- pepper (ground)
- nutmeg
- 1 tin of saffron
- 1 tbsp Lemon Juice
- 2 tbsp crème fraîche
- 1 tbsp dill
- 1 sprig dill (for garnish)
Instructions

Clean, wash and, if necessary, peel the vegetables; cut into small pieces.

Sauté the onion in butter until translucent; add the vegetables and pressed garlic, then pour in 1 l of water and simmer for about 30 minutes. Blend with an immersion blender, season with salt, pepper, nutmeg, saffron and lemon juice, and stir in the crème fraîche.

Cut the fish into bite-sized pieces and cook them in the hot soup for about 5 minutes until done. Serve the Finnish fish soup sprinkled with dill.
