Gratinated Lamb Chops

- 500 g lamb chops
- Salt
- pepper (ground)
- 1 tbsp Olive Oil
- 150 g leeks (finely chopped)
- 1 tsp butter
- 1 tbsp flour
- 60 g crème fraîche
- 1 Egg white
- 3 tbsp Tilsiter cheese (grated)
- 2 tsp finely sliced sage leaves
- Salt
- Pepper
- 1 small onion (finely chopped)
- 80 g mirepoix (carrot, leek, celery, finely chopped)
- 1 tsp flour
- 200 ml clear vegetable broth
- 2 garlic cloves (finely chopped)
- 1 bay leaf
- Salt
- pepper (ground)
- 125 g crème fraîche

Season the lamb chops with salt and pepper and sear them briefly in olive oil on both sides.

For the cheese crust, sauté leeks in butter until translucent, dust with flour, add crème fraîche, bring to a boil, then cool. Stir in sage, egg white, and grated Tilsiter to bind the mixture.

For the sauce, brown onions in the pan drippings, add mirepoix and cook briefly. Dust with flour, pour in broth, season with salt and pepper, simmer for about 5 minutes, then purée slightly and finish with crème fraîche.

Spread the cheese mixture over the prepared lamb chops and broil under a hot grill until golden. Serve with the sauce.
