Ingredients

  • 1 cucumber
  • 300 g cherry tomatoes
  • 1 EL lemon juice
  • 2 EL white balsamic vinegar
  • 4 EL vegetable oil
  • Salt
  • 1 pinch sugar
  • 4 salmon fillets (≈180 g each)
  • 0.5 box garden cress

Instructions

    Wash, peel and cut the cucumber into about 0.5 cm thick slices. Wash and halve the tomatoes. Arrange cucumbers and tomatoes on plates together. Whisk lemon juice with balsamic vinegar, 3 EL oil, salt and sugar; taste and adjust seasoning. Drizzle over the vegetables.

    Rinse the salmon fillets, pat dry, season with salt and cook in the remaining oil in a hot non‑stick pan for about 6 minutes per side until golden brown. Place on top of the salad and serve garnished with sliced garden cress.
