Salmon with Spinach
Salmon with spinach is a recipe featuring fresh ingredients from the leafy greens category.
Ingredients
- 600 g salmon fillet
- 1 untreated lemon
- 1 red chili pepper
- 1 Garlic clove
- 600 g fresh spinach
- 5 tbsp olive oil
- Salt
- ground pepper (from grinder)
- freshly grated nutmeg

Rinse and pat dry the salmon. Wash the lemon hot, dry it, grate its zest and squeeze out the juice. Marinate the salmon with the lemon zest and juice. Wash the chili and slice into rings. Add to the salmon, cover and let sit for about 15 minutes.

Peel the garlic. Thoroughly wash the spinach and remove any tough stems if necessary. Heat 3 tbsp oil in a sauté pan over high heat. Place the salmon in the pan and sear each side for 2-3 minutes until golden. Season with salt and pepper.

Heat 2 tbsp oil in a pot and press in the garlic. Add the spinach, just enough to keep it slightly wet, and let it wilt. Season with salt, pepper and nutmeg.

Break the salmon into pieces and arrange on plates with the spinach. Drizzle some remaining olive oil over the dish and serve. Offer lemon slices as desired.
