Salmon with Sesame Crust and Broccoli

Ingredients
- 600 g Broccoli
- Salt
- 1 Garlic clove
- 15 g ginger
- 480 g very fresh salmon fillet (8 pieces)
- Pepper
- 30 g Sesame seeds
- 15 g Coconut oil (1 tbsp)
- 2 tbsp sesame oil
- Chili threads
- 50 ml Vegetable broth
- 2 tbsp Lime juice
- 1 Lime

Clean, wash, and chop the broccoli into florets. Cook in boiling salted water for 4 minutes, drain, shock in cold water, and drain well. Meanwhile, peel and finely chop the garlic. Peel and grate the ginger. Rinse the salmon under cold water, pat dry, season with salt and pepper, and coat with sesame seeds.

Heat coconut oil in a pan and brown the salmon skin-side down over medium heat. Then flip and brown on the other side as well. Place on an oven-safe dish or baking sheet and let it rest in the preheated oven at 100 °C (convection not recommended; gas: lowest setting) for about 10 minutes (it should still be translucent inside).

Meanwhile, heat sesame oil in a wok and sauté the garlic and ginger in it. Add broccoli and chili threads, stir, deglaze with broth, and season with salt, pepper, and lime juice. Wash the lime under hot water, pat dry, and slice into wedges. Arrange 2 pieces of salmon and the broccoli vegetable on 4 plates and garnish with lime wedges.
