Salmon with Cabbage

Ingredients

  • 0.5 red bell pepper
  • 0.5 orange bell pepper
  • 1 Lime
  • 0.5 Chinese cabbage
  • 4 salmon fillets (about 200 g each)
  • 4 tbsp soy oil
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp coriander seeds
  • 300 ml coconut milk
  • 3 tbsp capers

Instructions

    Wash the peppers, halve them, remove seeds and white membranes, and slice into very thin strips. Squeeze the lime. Wash the Chinese cabbage, trim the core, and cut into strips. Rinse the fish, pat dry, and drizzle with 2 tbsp lime juice. Then fry in a pan with 2 tbsp hot soy oil for 2-3 minutes on each side, seasoning with salt and pepper.

    In a second pan toast the coriander seeds, then add the remaining oil and cook the pepper strips and cabbage for about 2 minutes. Pour in coconut milk and the remaining lime juice, season with salt and pepper to taste. Distribute the vegetables onto four plates, place the fried salmon on top, and sprinkle with capers.
