Salmon steak with butter sauce

Ingredients
- 2 salmon steaks (about 200 g each)
- 2 tbsp lemon juice
- Salt
- Pepper (freshly ground)
- Chinese cabbage
- 250 ml fish stock
- 30 g ice‑cold butter
- fresh dill

Season the salmon with salt, pepper and drizzle with lemon juice.

Wash and clean cabbage leaves, lay them in a steamer basket, place the salmon steaks on top.

Bring the fish stock to a boil, add the steamer basket to the pot and steam the salmon covered for about 3 minutes, flip and steam another 3 minutes. Remove the basket and set aside covered.

Reduce the stock over high heat until it is cut in half, remove from the stove and whisk in butter pieces with a whisk to thicken the sauce. Stir in dill, season with salt and pepper, and serve with the salmon steaks. Offer boiled potatoes and salad on the side.
