Ingredients

  • 300 g green beans
  • 2 salmon fillets (about 160 g each)
  • 2 Tomatoes
  • 1 garlic clove (finely chopped)
  • 1 tbsp pine nuts
  • 0.5 lemon (juice and zest)
  • 1 tbsp dried tomatoes (chopped)
  • 2 tbsp basil (finely chopped)
  • 4 tbsp olive oil
  • 100 ml White wine
  • Salt
  • ground pepper

Instructions

    Wash, trim, and cook beans for about 10 minutes in simmering salted water. Remove, rinse, and drain. Then blanch the tomatoes briefly, peel, quarter, seed, and dice them. Salt the salmon, gently sear both sides in 2 tbsp oil, deglaze with white wine and lemon juice, cover, and steam on very low heat for about 8 minutes until translucent.

    In remaining oil sauté beans and garlic. Add pine nuts, dried tomatoes, fresh tomatoes, basil, and lemon zest; mix well. Season with salt and pepper. Arrange beans decoratively on warmed plates, place salmon fillets on top, and scatter remaining tomatoes and pine nuts over the dish. Serve immediately.
