Salmon Trout Wrapped in Foil

- 300 g salmon trout fillet (skinless)
- Salt
- Pepper
- 1 bulb fennel
- 1 tbsp Olive Oil
- 2 tbsp white wine
- 0.5 lemon
- 1 tsp saffron strands

Wash the salmon trout fillet, pat dry with kitchen paper and check for bones; remove any with tweezers if necessary. Season both sides of the fish fillet with salt and pepper. Preheat the oven to 180 °C. Clean and halve the fennel lengthwise.

Trim off the core, discard the greens, and slice the halves into thin rounds. Sauté the fennel briefly in olive oil, season with salt and pepper, then deglaze with white wine. Place the sautéed fennel on a large piece of aluminum foil. Squeeze the lemon half over the fillet and sprinkle saffron strands on top.

Fold the edges of the foil tightly over the fish to seal. Place the foil packet on a baking tray and bake in the preheated oven for about 12 minutes. Transfer the packet onto a warmed plate and open it only at the table.
