Ingredients

  • 2 stalks leeks
  • 1 Zucchini
  • 2 red bell peppers
  • 1 fresh lemon
  • 8 tsp soft herb butter
  • Salt
  • Pepper
  • aluminum foil
  • 1 tbsp chopped parsley

Instructions

    Clean the leeks, cut into rings, wash thoroughly and drain. Rinse the zucchini, clean it and slice into sticks. Quarter the bell pepper, clean, rinse and cut into strips. Wash the lemon, grate its zest and slice it thinly.

    Brush four pieces of aluminum foil with 4 tsp herb butter each. Mix the vegetables and lemon zest and place on the foil. Season with a little salt and pepper.

    Rinse the salmon fillet, pat dry and season with salt and pepper. Place on top of the vegetable mixture and add the remaining herb butter in small lumps and the lemon slices (Step 2). Fold the foil over the fish and seal the sides well. Put the packets on a baking tray. Bake in a preheated oven at 200°C (or 180°C fan) for about 25-30 minutes.

    Serve the salmon fillet and vegetables sprinkled with parsley. Serve with rice.
