Ingredients
- 8 salmon fillets (≈120 g)
- 50 ml olive oil
- 1 tsp Dried Italian herbs
- 1 untreated lime (juice and zest)
- pepper (ground fresh)
- Salt
- 2 handfuls young sorrel

Wash the salmon and pat dry. Mix olive oil with herbs, lime juice and zest, and a pinch of pepper; brush fillets with mixture. Grill each side 3-4 minutes on a hot grill, basting occasionally with remaining sauce. Finish with a sprinkle of salt.

Wash, trim, and let sorrel drain well. Arrange on a plate and place salmon fillets on top.

Serve with herb butter if desired.
