Baked Sweet Potatoes
Baked sweet potatoes taste great again and are easy to prepare! Try this recipe from Spoonsparrow.
Ingredients
- Olive oil (for the baking pan)
- 600 g Sweet Potatoes
- 4 Spring Onions
- 5 stems thyme
- 2 stems sage
- 2 untreated limes
- 2 tbsp olive oil
- Sea salt
- pepper (ground)

Preheat the oven to 180°C with fan and top heat.

Brush a roasting tray or gratin dish with oil. Peel, wash, halve lengthwise and cut sweet potatoes into 3-4 mm thick slices. Layer them tightly in the tray. Wash, trim, dry spring onions and add on top. Rinse herbs, shake dry, partially strip leaves and sprinkle over everything. Slice one lime and insert between sweet potato layers. Quarter the second lime, squeeze a little juice over the vegetables and also spread lightly squeezed lime pieces on the veggies. Drizzle with oil and season with salt and pepper. Bake in the oven for about 35 minutes until golden brown. Enjoy baked sweet potatoes warm or cold.
