Ingredients
- 3 balls of mozzarella (125 g each)
- 50 g Baby Spinach
- 250 g salmon fillet skinless (back fillet)
- Salt
- pepper (from grinder)
- 1 glass capers (40g)
- 1 Red Onion
- 60 ml olive oil
- orange slice for garnish
- fresh chervil for garnish
Instructions

Cut the mozzarella into small cubes. Wash and dry the baby spinach, then cut into strips. Dice the salmon fillet and season with salt and pepper.

Drain the capers and reserve the liquid. Mix the capers and 2 tbsp of caper liquid with the salmon. Peel the onion and slice into rings.

Distribute the mozzarella in 4 glasses. Layer spinach and salmon on top. Drizzle with olive oil and garnish with onion rings, orange slices, and chervil.
