Tuna Tartare

Ingredients

  • 400 g fresh tuna
  • 100 g Red lentils
  • 1 pinch saffron
  • 1 Lime
  • 1 tbsp finely chopped white onions
  • 5 tbsp olive oil
  • 1 tbsp mustard
  • Salt
  • ground pepper
  • balsamic vinegar

Instructions

    Soak the lentils in cold water overnight. During preparation, cook the lentils in lightly salted water with saffron until tender. Drain and set aside to cool. Carefully clean the tuna, removing all tendons and skin. Dice finely and place in a large chilled bowl. Wash the lime thoroughly and grate its zest over the tuna using a fine grater.

    Add the cooled lentils and onions to the tuna. Marinate with olive oil, lime juice, mustard, salt, and pepper, ensuring the liquid ratio keeps the mixture loose and not compact.

    Optionally stir in a splash of balsamic vinegar for extra depth.

    Fill chilled molds with the tartare, chill briefly, then serve on cold plates.
