Ingredients
- 800 ml vegetable broth
- 200 ml heavy cream
- Salt
- black pepper (freshly ground)
- Cayenne pepper
- 80 g young wild garlic leaves (about 2 handfuls)
- 1 clove garlic
- 2 slices whole grain bread
- 4 slices Smoked Salmon
- 2 tbsp Sour cream
Instructions

Bring the broth and cream to a boil in a pot, seasoning with salt, pepper, and cayenne pepper.

Wash, dry, and shake off the wild garlic. Set aside 4 leaves, finely chop the rest and add to the broth; let steep for 5 minutes (do not continue boiling). Peel the garlic clove. Toast the bread, rub it with the garlic, then dice into small cubes.

Slice the salmon and remaining wild garlic leaves into fine strips.

Serve by garnishing the soup with bread croutons, salmon strips, and fresh wild garlic, adding a dollop of sour cream to each serving.
