Ingredients
- 400 g Green Beans
- Salt
- 1 handful young spinach
- 1 stalk lemon balm
- 4 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 720 g salmon fillet (4 pieces)
- 1 Pomegranate

Wash, trim and blanch the beans in salted water for 5-6 minutes until al dente. Shock in ice water and drain. Wash and dry the spinach; remove lemon balm leaves. Quickly sauté the spinach with the beans in 2 tbsp hot oil. Season with salt and pepper.

Rinse the salmon and pat dry. Season with salt and pepper, then sear in a non-stick pan over medium heat for 2-3 minutes per side in the remaining oil. Finish on low heat until translucent.
