Salmon Spinach Tart with Potatoes and Onions

- 250 g Salmon fillet
- 250 g cooked potatoes
- 1 small red onion
- 200 g spinach
- 1 Garlic clove
- 1 EL Butter
- 4 eggs
- 150 g crème fraîche
- 50 g grated Parmesan
- 200 ml whipping cream
- Salt
- Pepper (freshly ground)
- Nutmeg (freshly grated)

Sift flour onto a work surface and form a well in the center. Cut butter into pieces and spread around the edge of the flour. Place an egg in the middle, sprinkle with salt, and combine all dough ingredients with a pastry cutter to make crumbs. Quickly knead by hand into a smooth dough that no longer sticks to your fingers; adjust flour amount as needed. Wrap in plastic wrap and chill for about 30 minutes.

Wash, pat dry, and cut salmon into 3 cm cubes. Peel and halve potatoes. Peel, halve, and slice the onion into rings. Wash, trim, and drain spinach. Peel garlic and finely chop. In a pan with hot butter, sauté for 1-2 minutes until colorless. Add spinach and let it wilt; evaporate excess liquid and set aside.

Whisk eggs with crème fraîche, parmesan, and whipping cream. Fold in spinach mixture and season with salt, pepper, and nutmeg.

Preheat oven to 180°C fan (about 350°F). Butter a tart tin.

Roll out dough on floured surface slightly larger than the tin; lift it into the tin, pulling up a rim. Spread spinach mixture, potatoes, salmon cubes, and onion rings over the base. Bake in the oven for about 45 minutes until golden brown.
