Salmon Patties with Spinach

Ingredients
- 800 g spinach
- 200 ml heavy cream
- 100 g grated Parmesan
- Salt
- Pepper
- nutmeg
- 1 tsp seasoned broth
- 300 g salmon fillet
- 200 g cooked potatoes
- 50 g flour
- 1 egg
- 2 tsp mustard
- Salt

- oil (for frying)

Wash, trim, and roughly chop the spinach, place it in a pot, steam until wilted, add cream and continue steaming until it collapses, season, taste, and sprinkle with parmesan.

Heat frying fat in a pot (it is hot enough when bubbles start to rise on the handle of a wooden spoon held in the oil).

Puree the salmon fillet, mash the potatoes into it, knead with egg, flour, mustard, salt, pepper, and nutmeg until smooth; if the mixture is too wet, fold in breadcrumbs. With damp hands form about 12-16 patties, fry portions to a golden yellow, drain on paper towels, and serve arranged with spinach on plates.
