Salmon Patties on Leek

Ingredients

  • 30 g onions (1 small onion)
  • 600 g salmon fillet
  • 4 sprigs dill
  • 1 egg
  • 1 tsp Mustard
  • 50 g whole grain breadcrumbs (4 tbsp)
  • Salt
  • Pepper
  • 2 leeks
  • 2 tbsp Rapeseed oil
  • 50 g cream cheese (45% fat content)
  • 0.25 tsp ground cumin
  • 0.25 tsp dried marjoram

Instructions

    Peel and finely chop the onion. Rinse the salmon fillet, cut it very finely and chop it. Wash and chop the dill. Knead the salmon with onion, half of the dill, egg, mustard, breadcrumbs, salt, and pepper into a moldable mass. Shape about 8-12 patties from the mass, depending on size.

    Heat 1 tbsp of oil in a large pan. Fry the patties for about 5 minutes per side over medium heat.

    Meanwhile, clean the leeks, wash them thoroughly and cut them into rings. Heat the remaining oil in a pan. Sauté the leeks in it for 5 minutes. Add cream cheese and 3-4 tbsp of water and stir until creamy. Season the leek vegetables with salt, pepper, cumin and marjoram.

    Arrange the salmon patties on the leek and decorate with the remaining dill.
