- 600 g salmon
- 4 Spring Onions
- 3 tbsp teriyaki sauce
- Pepper
- 8 slices pancetta
- 2 tbsp olive oil
- 8 baby Swiss chard
- 1 splash Lemon juice

Rinse the salmon, pat dry and cut into 8 pieces. Rinse the spring onions, trim and slice into thin strips about 7-8 cm long. Place half of the strips on each salmon piece, drizzle with a little teriyaki sauce, season with pepper, fold or roll up, and wrap each with a slice of pancetta. Secure with toothpicks. In a non-stick pan, heat 1 tbsp oil over medium-high heat and brown the rolls all sides for 1-2 minutes. Deglaze with a splash of water and steam gently for 3-4 minutes.

Finely chop the remaining spring onions. Wash, trim and halve the Swiss chard. Sauté both in the remaining oil in a hot pan for 2-3 minutes. Add a little water, season with teriyaki sauce and lemon juice, then plate. Remove toothpicks, place the halved rolls on top of the greens and serve.
