Ingredients
- 3 stalks leek (about 800 g)
- 3 tbsp butter
- Salt
- Pepper (freshly ground)
- 500 g salmon fillet (skin removed)
- 1 lemon (juice)
- 2 tbsp walnut oil
- 2 tbsp olive oil
- 2 tbsp freshly chopped dill
- 1 tbsp sharp mustard
- 1 tbsp coarse mustard
- fat for greasing the dish

Preheat the oven to 160°C fan.

Clean the leek, cut lengthwise, wash thoroughly and slice into rings. Heat the butter and sauté the leek for about 5 minutes. Season with salt and pepper. Cover and cook for another ~3 minutes until tender. Wash the salmon, pat dry, drizzle with lemon juice and lightly season. In a bowl whisk together the walnut oil, olive oil, dill, and both mustards. Place the leek in a large greased baking dish (or two smaller ones), lay the fish on top, and brush with the sauce. Bake in the preheated oven for about 20 minutes.
