Köfte

Ingredients
- 6 tomatoes
- 4 tbsp olive oil
- 2 tbsp lemon juice
- Salt
- 1 tbsp freshly chopped parsley
- 150 g long-grain rice

Cook the rice with a pinch of salt and about 300 ml water covered for approximately 20 minutes. Let it cool slightly without the lid. Peel and finely chop the onion and garlic. Sauté them in hot oil until translucent, then mix with the rice, one egg, parsley, and ground beef. Season generously with salt, pepper, and piment. Whisk the remaining two eggs. Shape the rice-beef mixture into köfte, dust with flour, dip in the whisked eggs, and fry in plenty of hot olive oil for 4-5 minutes until golden brown, turning occasionally.

Wash the tomatoes, cut off the stem ends, and slice them into wedges. Arrange on a plate. Drizzle with olive oil and lemon juice, season with salt, sprinkle parsley, and serve the köfte on top.
