Salmon Gratin with Kohlrabi

Ingredients
- 3 kohlrabi
- 500 ml vegetable broth
- 2 packs Hollandaise sauce (for 500 ml)
- 250 g whipping cream
- 4 tbsp grated cheese
- 4 tbsp Lemon juice
- 1 untreated lemon (zest and juice)
- 5 tbsp melted butter
- 250 g Salmon fillet

Peel, wash, and cut the kohlrabi into 12 evenly sized, not too thick slices. Finely chop the tender green leaves. Cook the kohlrabi slices for about 8 minutes in the broth.

Prepare the Hollandaise sauce according to the package instructions with the cream and about 250 ml of broth, then stir in cheese, lemon juice, and lemon zest.

Grease a baking dish with some melted butter and place four kohlrabi slices inside.

Cut the salmon fillet into eight pieces. Place one piece of salmon on each set of kohlrabi slices and drizzle with sauce. Repeat this process two more times.

Add the kohlrabi greens to the remaining sauce and pour over the kohlrabi bake. Drizzle with the leftover butter. Bake in a preheated oven at 200°C for about 15-20 minutes.
