Ingredients
- 4 salmon fillets (250 g each)
- olive oil
- Salt
- freshly ground pepper
- 1 tbsp Lemon Juice
- 150 g mozzarella
- 100 g green olives (pitted)
- 6 sun‑dried tomatoes (in oil)
- 100 ml dry white wine

Preheat the oven to 200°C (400°F) with both fan and conventional heat. Lightly oil a baking dish.

Wash the salmon fillets, pat them dry, and place them in the dish. Season the fillets with salt, pepper, and lemon juice. Slice the mozzarella and arrange it over the fish. Roughly chop the sun‑dried tomatoes and olives and scatter them on top. Bake in the oven for 15–20 minutes. After about 10 minutes, pour a little wine over the dish.
