Salmon Fillets on Cedar Wood

Ingredients

  • 2 shallots
  • 2 Garlic cloves
  • 2 Spring Onions
  • dill
  • 0.5 lime
  • 2 tbsp Maple syrup
  • 2 tbsp olive oil
  • Salt
  • Pepper
  • 640 g salmon fillet (4 fillets)

Instructions

    Soak cedar wood at least 1 hour, preferably overnight, in cold water.

    Meanwhile peel and finely dice shallots and garlic. Wash, trim and chop spring onions. Rinse dill, shake dry and finely chop the tips.

    Squeeze half a lime. In a bowl whisk lime juice with shallots, garlic, spring onions, dill, maple syrup and olive oil; season with salt and pepper.

    Rinse salmon under cold water, pat dry and mix with the dressing.

  5. 5.

    Remove wood from water, pat dry, place on a hot grill grate and cover. Grill for about 4–5 minutes until the wood starts smoking.

    Place fish on the cedar wood, cover and cook for 10–15 minutes until lightly translucent pink. Serve immediately on the cedar wood.
