Ingredients

  • 300 g thick potatoes
  • 1 tbsp chopped parsley
  • Zucchini (1/3 green, 1/3 yellow)
  • 1 red bell pepper
  • 1 stalk Celery
  • 1 Carrot
  • 2 tbsp butter
  • 4 pieces salmon fillet (about 200 g each)
  • 3 tbsp oil
  • Salt
  • ground pepper

Instructions

    Wash potatoes thoroughly and slice them very thinly. Toss with 1 tbsp oil and parsley, then spread on a lightly oiled baking sheet. Bake in preheated oven at 180°C for about 30 minutes, sprinkling lightly with salt.

    Wash zucchini and cut into slices. Wash, trim, halve, seed, peel off the white skin of the bell pepper, and chop into small pieces. Trim celery and cut into ~1 cm thick pieces. Peel and dice the carrot.

    Heat butter in a saucepan and sauté the vegetables for 6 minutes. Season with salt and pepper, then keep warm.

    Season salmon with salt and pepper and grill on a greased grill for about 3-4 minutes per side.

    Plate the salmon with the vegetables and potatoes and serve immediately.
