Salmon Blinis

- 1 lemon
- 125 g crème fraîche
- 150 g Smoked salmon
- dill sprigs
- 2 tbsp caviar
- 2 tbsp liquid butter
- a pinch salt
- butter fat (for frying)

Separate the eggs. Mix wheat flour and buckwheat flour. Dissolve yeast in milk and stir into the flour with liquid butter, yolks, and salt. If the batter is too thick or thin, adjust the milk slightly. Cover and let rise in a warm place for about 20 minutes. Chill the egg whites; beat them stiff before folding them into the batter.

Heat some butter fat in a pan, drop spoonfuls of batter, and cook each side for 1–2 minutes until golden brown. Fry all blinis this way. Drain on kitchen paper (optionally keep warm at 80 °C in the oven until finished).

Peel the lemon thoroughly, remove the zest, and cut into small pieces. Place a dollop of crème fraîche on each blini. Tear the salmon into pieces and arrange around the cream. Garnish with lemon, dill, and caviar before serving.
