Ingredients
- 350 g frozen puff pastry
- 500 g broccoli
- 1 onion
- 2 Garlic cloves
- 200 g double cream fresh cheese (at least 60% fat)
- 3 eggs
- 200 ml whipping cream
- 100 g freshly grated Parmesan
- Salt
- Pepper
- 1 pinch nutmeg

Let the puff pastry thaw.

Wash, trim and cut the broccoli into small florets. Peel and finely chop the onion and garlic cloves. Whisk the fresh cheese with the eggs, cream and half of the Parmesan until smooth. Fold in the broccoli, onion and garlic and season with salt, pepper and nutmeg.

Divide the dough into two or four portions and roll each to fit a tart tin. If necessary, grease the tins and line them with puff pastry. Spoon the filling onto the dough and spread it evenly. Sprinkle with the remaining Parmesan and bake in a preheated oven at 160 °C (140 °C fan; gas: level 2) for about 40 minutes until golden brown.
