Ingredients
- 1 tsp juniper berries
- 1 tsp coriander seeds
- 1 tsp peppercorns
- 4 tbsp sugar
- 1 tsp fennel seeds
- 6 tbsp sea salt
- 500 g salmon fillet (ready-to-cook with skin)
- 200 g crème fraîche
- 25 large potato chips
- pink peppercorns
- dill sprigs (for garnish)

Coarsely crush the juniper berries with coriander and pepper in a mortar. In a bowl mix with sugar, fennel, and salt. Spread 1–2 tbsp of the mixture on a flat dish.

Rinse the salmon, pat dry, and lay skin side down on the seasoned surface. Sprinkle remaining spice salt over the fish, cover with cling film, and lightly press down. Refrigerate for about 48 hours to marinate.

Remove the salmon from the brine, rinse and pat dry. Slice thinly at a slight angle. Place a dollop of crème fraîche on each chip and top with a slice of salmon. Garnish with pink peppercorns and dill sprigs before serving.
