Ingredients
- 400 g very fresh salmon
- 0.25 bunch chives
- 1 tart apple (e.g., Granny Smith)
- Lemon juice
- 1.5 tbsp Osietra caviar
- 1 tbsp grape seed oil
- Salt

Cut the salmon into very small cubes. Rinse the chives, shake dry and cut into fine ribbons. Peel the apple, quarter it, remove the core and cut into very small cubes. Mix immediately with lemon juice. Combine with salmon, chives, caviar and oil, season with salt and lemon juice.

Use a ring mold to arrange the tartare on a plate and garnish with a dollop of caviar and chive stems.

Serve with toasted bread strips if desired.
