Salmon and Avocado Sandwich

Ingredients

  • 1 tomato
  • 0.5 bunch Basil
  • 50 g sour cream
  • 0.5 tsp mustard
  • Salt
  • Pepper (freshly ground)
  • 1 ripe Avocado
  • 1 tbsp Lemon Juice
  • 4 fresh lettuce leaves
  • 8 slices sandwich bread (or whole grain toast)
  • 150 g smoked salmon (thinly sliced)

Instructions

    Wash the tomato, halve it, remove seeds and dice the flesh.

    Cut basil leaves into thin strips.

  3. 3.

    Mix tomato and basil with sour cream and mustard, season with salt and pepper.

    Halve the avocado lengthwise, pit, peel and slice thinly. Drizzle lemon juice to prevent browning.

    Wash lettuce leaves, shake dry, cut thick ribs flat.

    Layer bread slices with lettuce and salmon. Spread avocado and tomato cream on top.

    Place remaining bread halves on top, cut breads diagonally and serve.
