Ingredients

  • 200 g smoked mackerel
  • 1 head of lettuce
  • 1 clove garlic
  • 1 bunch Green asparagus
  • 1 handful watercress
  • 400 g small new potatoes
  • 2 tbsp grape seed oil
  • 4 Tbsp sunflower oil
  • 2 tbsp white wine vinegar
  • 2 tbsp lemon juice
  • 1 tsp Honey
  • 1 tsp sharp mustard
  • Salt
  • Pepper (freshly ground)

Instructions

    Wash or brush the potatoes thoroughly and steam them for about 25 minutes. Let them cool slightly and cut into thick slices.

    Shred the mackerel.

    Rinse, trim, and cut the lettuce into strips.

  4. 4.

    Peel the garlic clove and finely chop it.

  5. 5.

    Peel and halve the lower third of the asparagus.

    Wash, rinse, and pat dry the watercress.

    Sauté the asparagus in 1 tbsp hot oil, deglaze with a little water, cover and simmer for about 8–10 minutes until al dente.

    Brown the lettuce in 1 tbsp hot oil until golden brown. Season with salt and pepper.

    Mix the remaining sunflower oil with grape seed oil, lemon juice, honey and sharp mustard. Season with salt and pepper to taste.

    Carefully combine the asparagus with the potatoes and watercress in a bowl and toss with the dressing. Add the fish, season again, and divide among plates. Top with chicory leaves and serve warm.
