Ingredients

  • 12 scallops (prepped, with roe)
  • 600 g Thai asparagus
  • Salt
  • 0.5 bunch Chives
  • 40 g Butter
  • Pepper (freshly ground)

Instructions

    Wash scallops and pat dry. Wash asparagus, trim ends and blanch in boiling salted water for 2-3 minutes. Drain, shock in cold water and let drain well. Rinse chives, shake dry and cut into fine ribbons.

    In a pan melt butter and sear scallops with roe and asparagus until golden brown. Season with salt and pepper, fold in chives, and serve on preheated plates.
