- 200 g mixed salad leaves (arugula, oak leaf, dandelion, batavia... )
- 150 g goat fresh cheese with herb coating (from the roll)
- 2 tbsp chopped walnut kernels
- 3 tbsp olive oil
- 1 tbsp walnut oil
- 0.5 tsp Sugar
- Salt
- black pepper (freshly ground)
- 1 tsp Mustard
- 1 tbsp balsamic vinegar
- 1 tbsp White Wine Vinegar

Wash, clean, and dry salad leaves, then tear into bite‑size pieces as needed.

Slice goat cheese into approximately 1 cm thick slices.

Whisk vinegar, salt, pepper, mustard, and sugar; whisk in the oils with a whisk until emulsified, taste, and fold in chopped walnuts.
