Ingredients
- 2 onions
- 3 fennel bulbs
- 1 tbsp Olive Oil
- 750 ml vegetable broth
- Salt
- Pepper (freshly ground)
- 2 tbsp chopped parsley
- 250 g whipping cream

Peel and finely dice the onions. Clean, wash, and slice the fennel bulbs into rounds. Set aside some fennel fronds for garnish.

Sauté the onions in hot olive oil in a pot, add the fennel and cook briefly. Pour in the broth, bring to a boil, then simmer gently for about 20 minutes. Add the cream, puree the soup, return to a boil, season with salt and pepper, and garnish with fennel fronds.
