Ingredients

  • 2 heads of lettuce
  • 1 onion
  • 2 tbsp butter
  • 1 tbsp flour
  • 0.75 l meat broth (homemade or instant)
  • 200 g heavy cream
  • Salt
  • Pepper (freshly ground)
  • 2 tsp lemon juice

Instructions

    Wash the salad and cut into leaves. Blanch the leaves in plenty of salted water for 3 minutes, shock with cold water, drain well, and slice into thin strips. Peel the onion. Heat butter in a pot, finely chop the onion and sauté until translucent, sprinkle flour, cook briefly to lighten color, then stir in broth and cream, simmering while stirring occasionally for 10 minutes.

    Set aside 4 tbsp of salad strips, add the rest to the soup and blend everything. Season with salt, pepper, and lemon juice; let simmer for 5 minutes. Ladle the soup onto plates and garnish with the remaining salad strips.
