Ingredients

  • 200 g parmesan
  • 100 g arugula (1 bundle)
  • 2 Tomatoes
  • 1 ball mozzarella
  • 2 tbsp finely sliced basil
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp white wine vinegar
  • 6 tbsp Olive oil
  • 8 slices Parma ham
  • 4 grissini
  • 150 g cherry tomatoes
  • 8 slices toast bread

Instructions

    Grate the cheese finely. Place 1/4 of the grated parmesan in a non-stick pan for each basket (about 16 cm diameter) and melt over medium heat until it bubbles, turns slightly golden brown. Remove from heat, let cool slightly, then carefully lift with a spatula, transfer to a turned-over small bowl, and set aside to cool. Repeat to make four baskets.

    Wash, clean, trim the stems of arugula and break into bite-sized pieces. Blanch tomatoes, peel, quarter, seed, and dice finely. Dice mozzarella similarly. Whisk together salt, pepper, vinegar, oil, and basil to make a salad dressing and fold in tomato cubes. Wrap two slices of Parma ham around each grissini stick.

    Toast the bread slices and cut out star shapes with a cookie cutter.

    Fill the Parmesan baskets with cherry tomatoes, mozzarella, and arugula, drizzle with the salad dressing. Arrange on plates, add the grissini sticks, and garnish with toast stars before serving.
