Russian blinis with caviar from Spoonsparrow are perfect for any party buffet!
Ingredients
- 150 g buckwheat flour
- 50 g wheat flour
- 1 pinch salt
- 10 g yeast
- 250 ml lukewarm milk
- 2 tbsp liquid butter
- 3 eggs
- butter fat (for frying)
- 200 g Cream cheese
- trout caviar
Instructions

Separate the eggs. Mix the flours together. Dissolve the yeast in the milk and stir it with the liquid butter, egg yolks, and salt into the flour mixture; cover and let rise in a warm place.

Beat the egg whites until stiff and fold them into the dough before baking.

Heat some butter fat in a pan, drop spoonfuls of dough, press slightly flat, and fry golden brown on both sides; keep warm.

Serve with trout caviar and cream cheese, and garnish with decorative flags if desired.
